I sliced my thumb open rather spectacularly while making dinner. The sad part? It was a butter knife that did the job.

After helping me clean up and bandage it, my sister announced that I should only use plastic knives and safety scissors in the future.

And now, for something useful.



No Bake Chocolate Peanut Butter Oat Clusters
15 Minutes to Prepare and Cook

Ingredients
1/2 c. Buttery spread (Smart Balance, Promise etc.)
2 oz. (2 squares) unsweetened baking chocolate
3/4 c. honey*
1/4 c. water
1/2 t. pure vanilla extract
3/4 c. natural peanut butter
1 c. chopped almonds
3 c. old fashioned rolled oats

Directions
Melt Earth Balance, chocolate, honey, and water in a medium saucepan over medium heat until it comes to a boil. Remove from heat. Stir in vanilla extract. Gently stir in peanut butter. Add oats and almonds & stir until incorporated. Drop by tablespoon onto wax paper lined cookie sheet. Refrigerate until firm. Enjoy!

Number of Servings: 36

Tip: If you spray your measuring cup with PAM before measuring out the honey, it won't stick to it.
