teri is amazing

My roommate and good friend Teri is such an amazing cook, and she's really been on a roll this week. Right now I am eating "potato and leek soup," which actually appears to consist of not only potatoes and leeks, but an assortment of other tasty good things like squash, white kidney beans, celery, other green things that I can't identify, and some sort of large pasta bits. I'm not very well-versed in pasta taxonomy, but it's basically like enormous, soft macaroni. There's probably several other vegetables in here that I can't even see (I lost my glasses a couple of days ago, oi), and I know there are some spices because I taste them and they are fucking fabulous, but I couldn't tell you what they are.

Last night I came home to find her cooking a feast for five. And we demolished every bit of the following: breaded pork loin (for the meathheads; it was glorious), risotto prepared with squash, peas, and a few other other good veggies I can't remember now, asparagus with hollandaise, brocolli with a light cheese sauce, bunches of baby artichokes, and some other side that I now can't remember.

The day before that was her trademark pasta, which incorporates lots of tofu and spinach, and is always fantastic (I had leftovers of that for lunch today).

Sunday night was some sort of curry dish on black rice.

Saturday night odditory enlisted her to help him prepare a feast for many at his housewarming party. I can't even remember what all they made (what was it, Todd?) because we all drank a little too much that evening, but I remember that it was gut-bustingly good.

Today at work I was invited out to dinner by some co-workers. Upon inquiry, I was told that we were to dine at Panda Express. I had to pass. I would have declined anyway, actually -- I haven't eaten at a Panda Express yet and I don't plan to start now -- but it really made it a painfully obvious choice.

Geez, when I get my own place I'm really gonna miss this woman and her food.
