Experimental Recipe: Apple Sour Cream Coffee Cake

Ok, so this is really just a twist on my mom's standard sour cream coffee cake, but it ended up being pretty yum :)



Ingredients (grouped by bowl):

Cake:
1 stick butter (softened)
1 cup sugar
2 eggs

1 1/2 cups flour
1 1/2 tsp baking powder
1/4 tsp salt
A few dashes of cinnamon

1 cup sour cream
1 tsp baking soda

Topping:
1 large apple, peeled, cored
Cinnamon (to taste)
1/4 cup sugar

Instructions:

Pre-heat oven to 350 Degrees Fahrenheit

Topping:
1) After peeling and coring the apple, slice thinly and place in a bowl of water with lemon juice.
2) Put sugar and cinnamon in bowl, put aside for now.

Cake:
1) Cream butter, (full cup) sugar, and eggs together.
2) Mix flour, baking powder, salt, and cinnamon in a separate bowl.
3) Mix sour cream and baking soda together.
4) Mix all together slowly until batter has formed. Pour into a 13"x9" pan.

5) Place apple slices on the cake batter, distributing evenly.
6) Pour cinnamon/sugar mixture over the top of the cake.

7) Bake in oven for 50-60 minutes, until a knife can be inserted into the middle and removed cleanly.

(Normally my mom makes this with cinnamon/sugar/nut crumbs in the middle and on top, but apples seemed to work out well, too!)

If you've sliced the apple just the right thickness, the cake should remain moist but not overly soggy. Let cool and enjoy!
