If you think of other shows and movies where classical music is used for fight scenes - I can remember hearing it in gangster gun fights and slomo fistfights - really brutal ones where the whole gang is wiped out or one of the fighters, if there are only two, just doesn't stand a chance.

The image I take away from the classical music is the hopeless tragedy of the situation. As soon as I hear it, I almost certainly know that one of them doesn't stand a chance. Someone has something up their sleeve... not a rifle but a blade in this case. The werewolf can't see it coming. He thought it was a fair fight but it wasn't by a long shot. The music also has a way of making light of the dire situation too because of the completely opposite feel between the music and the action.

Also the name of the piece is Clair de Lune, by Debussy according to SuperWiki, so that fits the overall werewolf theme, I guess? And kind of gives us the hint of who is a relevant character in the ep? It is also surprisingly used in Trial and Error, but not in a similar scene.

As for the piano music during Sam and Dean's sequence... that was in the blues style, was it not? Perfect music for a no good, very bad day. As soon as you hear it, you know nothing is going to work right. It also brings an element of comedy to it - same with the classical sequence above.

That's my take on the music. :)
