This is one of my favourite meals to make because it's so easy and really light. Good for after a hard workout or a game of sports when you just don't feel like chowing down on grease.

Well there really isn't much to this you need
Fish
A frypan with a lid. I guess a pot would do I just prefer a bigger surface area then depth
Fresh fillets of fish. I tend to prefer Perch but you can use anything really. The best ones to use are the ones with a more watery taste. Last night I used Basa Fillets and I'm not against barramundi.
Enough foil to fully wrap the fillets
A couple of lemons (depending on how many fillets your making for 3 I used one lemon)
Lemon Pepper
Water.
Sprinkle the fillets with lemon pepper on one side then slice the lemon up and place a couple on the fish. Turn it over and do the same for the other side. Wrap it up in foil.
Place about an inch of water in the frying pan and place the fish in. It's ideal if you can fit it all on the bottom but it doesn't matter to much. Bring the water to boil. Then turn the heat right down to the lowest setting, put the lid on and wait.
Just keep an eye on your fish, I give it about 15 minutes on either side till It gets to that nice fall apart in your hands texture.
I then like to serve with Green salad and steamed rice. The salad can be anything, I reckon Caeser salad always goes well with fish but since I didn't have it I made cucumber, lettuce, celery, capsicum, snow peas sprinkled with a bit of french dressing. But really it is up to you :D The beauty of this recipe is it's flexibility. You can make it for one or you can make it for five people.
