This is my version of a Bourbon Chicken recipe (#45809) by Lisa Marie on
RecipeZaar.
My son used to love the Bourbon Chicken at a Cajun Cafe at the mall, but that stall closed. He was talking longingly about it the other day, so I decided to try making it. It was good! I think it needed a slightly deeper flavor, which is why I added the molasses - but don’t use a lot, because the flavor is very strong! It's simple to make, and makes great leftovers!
I served this with white basmati rice and roasted vegetables (Barefoot Contessa recipe)

Bourbon Chicken
Ingredients
* 2 lbs boneless chicken thighs, cut into bite-size pieces
* 1-2 tablespoon olive oil
* 3 medium shallots, minced
* Fresh ginger, minced - about 1 tablespoon, or to taste
* 3/4 teaspoon crushed red pepper flakes
* 1 garlic clove, minced
* 1/4 cup apple juice
* 1/4 cup light brown sugar, or to taste
* 1 teaspoon molasses, or to taste
* 2 tablespoons ketchup
* 1 tablespoon cider vinegar
* 1/2 cup water
* 1/3 cup soy sauce
Directions
1. Heat oil in a large skillet on medium-high heat
2. Add chicken pieces and cook until lightly browned and just cooked.
3. Remove chicken.
4. Turn heat down to medium and add shallots, ginger, and red pepper flakes. Cook for a few minutes, until onions have started to soften.
5. Add garlic and stir until scent is released, about 30 seconds (don’t burn the garlic)
6. Add apple juice, brown sugar, molasses, ketchup,, vinegar, and water over medium heat until well mixed. Turn heat to simmer and let sauce reduce, stirring occasionally.
5. Add chicken and simmer for 5 to 10 minutes.
6. Serve over hot rice and ENJOY.
My notes: I tripled the sauce recipe, which made A LOT of sauce. Next time, I will just double the sauce.
