I made these super easy chimichangas for lunch today (my fiance had his buddies over to play video games). They were SUPER delicious, easy, and took just under an hour from cooking the chicken to pulling them out of the oven.
You will need the following ingredients (feel free to add other veggies/spices as well):
--2 large chicken breasts
--16 oz. (regular size) jar of salsa (I used the Market Pantry mango peach from Target)
--4 10" flour tortillas
--1 cup shredded cheese
Cook the chicken and cut or shred. Combine chicken with about 3/4 of the jar of salsa, and 1/2 cup cheese. Mix together until salsa coats everything.
Preheat oven to 400 degrees F.
Microwave each tortilla approx. 20 seconds, so it gets soft and warm. Dampen one side of each tortilla with a bit of water. Put chicken mixture into the tortilla (wet side out), then fold sides in and stick together. Put the "seam" of the tortilla down on a baking dish so it holds closed.
Bake for about 20 minutes in 400 degree oven. Once the outsides of the chimis get warm and crunchier, turn the broiler on low and keep them under for 5-10 minutes, until they start to get golden brown. If you want to top with cheese, sprinkle on each chimichanga then put back in warm (but not turned on) oven.
