Two recipes in one. I came up with the Bananarama on my own but I'm sure there is something similar out there.
Banana Bread
2 cups sugar
2/3 cup butter
4 eggs
8 ripe bananas
3 cups flour
2 teaspoons baking soda
2 teaspoons salt
1 cup chopped nuts
Cream butter and sugar. Add in eggs. Mix well. In separate bowl mix flour, soda, and salt. Add dry mixture to butter mixture. Mix well. Mash bananas. Add bananas and nuts to mixture. Pour mixture into 2 greased loaf pans. Bake 1 hour at 350 degrees (F). A toothpick inserted in bread that comes out clean means the bread is done. Allow to cool about 10 minutes before slicing. Makes 2 loaves.
Bananarama Dessert
vegetable oil
2 bananas, sliced
2 teaspoons brown sugar or turbinado sugar
2 teaspoons cinnamon
1 teaspoon allspice
2 slices banana bread, cooled slightly from oven though still warm
2 scoops vanilla ice cream
Mix spices and sugar together in small bowl. Coat a sauce pan with oil. Cook banana slices in pan on medium high heat. Sprinkle half spice mixture over one side of bananas and then turn and sprinkle remaining mix over the other side of the slices. Cook till bananas begin to caramelize slightly. Place still warm slices of banana bread on 2 plates. On each slice of bread place a scoop of ice cream. Spoon 1/2 of bananas over each scoop of ice cream. Enjoy.
