Sauté onion and garlic in a bit of oil till it starts to brown. Add other vegetables & sauté for another 5-10 minutes. A vegetable broth or stock, tomatoes, garbanzos and cinnamon stick. Add spices. Cook for 1 hour or more, until flavors meld. Just a few minutes before serving, add parsley, lemon juice and spinach. Stir in well. Allow to cook until greens are wilted.
