Sort-of quiche / cheese and onion pie

For this dish we actually used a real-life COOKBOOK instead of the internet! Guess I forgot about those things ;) This was a congolmerate of the thought of a quiche, and a recipe for a Cheese & Onion pie. We mostly followed the pie recipe, and also added some cooked ham and an extra egg. It was really good!!

Switzerland Cheese-and Onion Pie

Ingredients:
pastry for one 9-inch piecrust
butter or margarine
1 large onion, chopped (about 1 cup)
1 Tb all-purpose flour
1/2 lb natural swiss cheese, shredded (2 cups)
3 eggs
1 cup half-and-half
1 tsp salt

**Ok, we didn't have half-and-half so we used milk, we used 4 eggs instead of 3, and we only had about 1 1/2 cups of the swiss so we added 1/2 cup shredded mozzerella as well!**

Directions:

1. Prepare and roll out pastry; line one 9-inch pie plate. Spread piecrust with 1 TB butter or margarine, chill well.

2. In small skillet over medium heat, in 2 TB melted butter or margarine, cook chopped onion until tender, about 5 minutes, stirring occasionally; spread evenly in piecrust. Meanwhile, preheat oven to 400 degrees F.

3. In medium bowl, toss well flour with cheese; sprinkle over onion in piecrust. **I added the layer of chopped ham on top of this layer**

4. In same bowl with wire whisk or hand beater, beat eggs with half-and-half and salt; pour over shredded Swiss cheese.

5. Bake 10 minutes. Turn oven control to 325 degrees F. and bake 30 to 35 minutes longer until knife inserted in center comes out clean. Let pie stand 10 minutes, then cut into wedges.

We added about 15 more minutes cooking time to this, cause it seemed a little soupy still - I think it was because we used milk, and the extra egg.

We also did make the pie crust but I dont feel like typing up the directions for that, too!! Just use your basic pie crust recipe, any one will do! I always forget how easy they are to make and how much better they taste than store bought.. and its cheaper to just make them! Remind me of that next time I need another pie crust ;)
