I never posted before, but this tasted so good, i had to poste, even though i forgot to take pictures when it was on the plate..so these are the leftovers, taken with a bad camera.
Ratatouille (served two big eaters and leftovers):
* 1 zucchini
* 1 eggplant
* 2 small green peppers
* 1 large yellow onion
* 3 cloves of garlic (minced)
* 2 big ripe tomatoes
* 1 little can of tomato-paste
* herbs de provence
* salt
--> Put on some (quite a lot) oil in a normal cooking pan, and slowly fry (its not really frying i guess, in dutch its called fruiten, i dont know the english word) the onions. add the garlic, let it simmer for a while
--> when the onions are soft, add the diced eggplant and sliced green peppers. let it simmer for 15 minutes, or longer if necessary. if you think it needs more fluid, add a little bit of water.
--> when the eggplant is pretty soft allready, add the zucchini and tomatoes. let it simmer for another 15 minutes or longer. you have to check it regularly, its done when the vegetables are soft and mushy.
--> stir in the tomato-paste (when you have really strong tasting tomatoes you can leave this out)
--> add the herbs and salt to taste. i'm not sure if you can buy herbs de provence premade everywhere, its a mixture of rosemary, savory, thyme and marjory. sometimes lavender, basil and sage is added. it gives a lot of dishes that southern (european) feeling.
I served it with cooked patatoes and meatballs and a little bit of gravy...jummmm!! but its great with couscous or rice too.
