It's STILL freezing in Mexico City and I would have liked soup for breakfast, but it just didn't sound good ....so I decided I needed some Chilaquiles....It was actually the first time I've ever made them, so I kinda just went for it, but they turned out pretty yummy.
Start out making a Salsa with red and green tomatoes, onion and chiles and whatever other things you like to put int your salsa. Food process it all up.
Next, make chips.....out of pure need, I just broke up tostadas today....you can use corn chips too, or just fry up corn tortillas if you'd like
Finally, in a pan, add the salsa to the chips and heat them up until the chips are soft but not mushy.
Top it off with sour cream and shredded cheese, maybe a fried egg if you so please.
*This dish is chock full of protein if you make it with corn chips, beans and eggs.
