Flavored Jam Tea Cookies

I have found the PERFECT cookies! I made a batch of these yesterday and they are already gone. I haven't had anything sweet in the apartment for about 2 weeks and I couldn't stand it anymore. Very cute indeed! I make similar cookies with a cream cheese dough and strawberry jam I make from scratch. I just made them this weekend!

I ganked it from Cooks.com. :)

1 c. butter
1 c. sugar
1 (3 oz.) pkg. cream cheese
1 tbsp. vanilla
1 egg yolk
2 1/2 c. flour
Strawberry jam

Have all ingredients at room temperature. Cream butter, sugar and cream cheese. Add vanilla and egg yolk, mix well. Add flour, blend. Chill dough. Shape into balls. With thimble indent center. Fill with jam. Bake on ungreased cookie sheet at 350 degrees 10-15 minutes.

I make my own jam stuff too. Halve about 3/4 pounds of fresh strawberries and coat them in sugar and a pinch of salt. Cover them and chill for about 30 minutes. Puree them in a food processor and then bring the mixture to a boil in a small saucepan. Reduce to half. Add sugar to taste. It makes an awesome strawberry filling. :)

It tastes just as good with fat free cream cheese too. Everyone I know loves these cookies.
