All Your (Shrimp and Catfish) Base Are Mine!

A few weeks ago I watched my step-father frying up the shrimp we had for dinner later that night, and I started thinking that I could do that. I am sure that seems like no big deal to most of the people reading this. However, you have to understand that I did not inherit the cooking gene, my brother did. I can do pizza rolls and chili from scratch, I even made cheesy potatoes once, but that is the extent of my culinary skillz.

So when I saw shrimp on sale last week I bought some. Catfish fillets too. Last night I was daring and fried up the shrimp, using a cornbread-based breading I bought with the catfish. It came out good! I was munching on shrimp all day. I was most triumphant!

I used up all my olive oil making the shrimp however, and I really do not feel like going out today to buy more oil to fry up the catfish, as was my original intent. I thought about making it later, but well, it has been in the refrigerator all week, and it is starting to become rather pungent. So I decided to change plans and bake it instead.

I used the last of my breading on the fillets, covered them with a layer of basil, rosemary, and cracked pepper. I saw several recipes saying to put cheese on fish too, so I put some colby-jack on half of them to see how that would turn out. It is baking in the oven right now, and (hopefully) yummage will shortly ensue.

This is amazing. I am actually cooking for real.
