chocolate cookies

This weekend I made a new (to me) cookie that turned out pretty well. So here it is.

Chocolate Chocolate Chip Cookies

1/2 c butter, softened
1 c sugar
1 c brown sugar
2 eggs
1 t vanilla
2 c whole-grain spelt flour
1 t baking soda
1 t salt
1/3 c unsweetened dark cocoa powder
2 c chocolate chips

Cream together butter and sugars. Beat in eggs and stir in vanilla. Sift together dry ingredients and add. Stir in chocolate chips. Roll by rounded tablespoon into balls and flatten. Bake on greased cookie sheet 9 minutes at 375 Fahrenheit. Let sit two minutes before transferring to wire rack to cool completely.

I like to pretend that the spelt and cocoa supply fiber and antioxidants that cancel out the badness of eating so much sugar and butter.
