Yummy ice cream again

Yesterday, Rob made a small batch of chocolate stevia sugared ice cream, to try out the machine, and to try out stevia as a sugar replacement.

While not as sweet as full sugar (at least not the amount he used), it is still yummy. It also has some eggs in the mix as well, for a little added protein.

And the coolest thing... Cam loves it! He asked for it as his after lunch treat, so we all indulged in a little(except Maurelle who already is down for her nap). This means I can offer him a nice semi-healthy treat like this once in awhile, and I know he will eat it and not turn his face up at it because it isn't full sugared high-calorie ice cream. I hope Maurelle will feel the same.

And that makes me happy. See, my Dad wouldn't let me enjoy something like this because it was bad for me. So, I bought it from the corner greasy spoon as often as I could, since it was forbidden at home. So, naturally, all that wonderful ice cream went to my waist and everywhere else on my body, especially after I quit riding my bike everywhere. But now, I can give something my son enjoys as a treat, and know that he won't get into that gotta-have-it-because-it-is-forbidden-binge. At least, not with ice cream, not when it is made like we will.

I love this diet, I really do. To be able to enjoy ice cream like this, a little at a time of course, but for it to be eaten and still continue to lose weight is really cool.

Next time we do ice cream, which will be a bit, I think Rob said he was going to try it with Splenda. We shall see how well that works.
