Well, last night I splurged and made some low-carb chocolate chip oatmeal cookies with walnuts, using "carb quick" whole wheat flours, and Splenda substitutes for the sugar & brown sugar. Oh, man they were yummy! I could barely taste the Splenda, and they tasted lighter than the usual cookie recipe, and I didn't get a sugar rush or jitters, just a little bit of sugar in my system. I think it helped that I ate regular P1 meals that day, with only one whole wheat tortilla with dinner (P2 style), and lots of protein, including tri-tip and veggies.
I won't be doing that a whole lot, like only on game weeknights, but it helped me to know I can enjoy cookies once in awhile, not have to pig out on them, and they were healthier than regular cookies are.
I have the rest of the batch in the freezer for next game session, and the few cookies left will probably go to Cam if he wants them (and is a good boy and eats his dinner), although I may eat one more tonight after dinner.
Here's the recipe.
Kimiko's Low-Carb Chocolate Chip Oatmeal Cookies
Stuff:
1/2 cup Crisco vegetable shortening (can replace with butter)
1/2 cup butter
1/2 cup brown sugar Splenda or 1 cup brown sugar
1/2 cup baking sugar Splenda or 1 cup Splenda granular
2 eggs
2 tsp vanilla
1 tsp baking soda
1 tsp salt
1 1/2 cups Carbquik, or other white flour substitute
3 cups rolled oats
1 cup (or bag) semi-sweet or dark chocolate chips
Optional stuff: 1 cup nuts
Preheat oven. Mix ingredients together in order. Spoon onto baking sheet covered with parchment paper. Lightly flatten cookies with a fork before baking (Splenda doesn't flatten as well as sugar during baking).
Bake 11-12 minutes at 350 degrees, or until golden brown.
