Demons have long been integral to the SPN arc, as foes and uneasy allies, and the striking black - or yellow, or red, or white - possessed eyes are a striking indicator of these creatures. And this striking effect has been used very well on familiar characters throughout the series - it's so jarring and fascinating to see a familiar character changed so fundamentally and thoroughly just by the presence of the possessed eyes.
