Sadly, while I would love some, I am realizing that gluten-free may be my permanent future. I WOULD KILL SOMEONE FOR A DINNER ROLL, BEAN.

I'm not positive about roll type things, but I had great luck using, um, I believe it was chickpea flour, from Whole Foods, when making a cake for a gluten intolerant co-worker. So long as the cake recipe you start with is already supposed to be dense, it works out great. Not identical to cake-with-flour but still very tasty.

Yeah, whole foods actually has a decent array of gluten-free mixes. And I've got a link somewhere where someone used a crock pot to bake gluten free bread (rice flour, I believe) and actually got it nearer wheat bread consistency.

Oh ugh. Ugh. May I ask if you cyliac (sp?)? My bff husband has it and when they were in town a few weeks ago, I spent hours trying to locate places that were gluten free and took steps to ensure there was no to limited cross contamination.

Luckily my favorite bar has gluten free pizza made with chickpeas and gluten free beer so he has pretty happy.

I don't think it's celiac because I can tolerate small amounts of wheat gluten, but I feel tons better when I don't have any, so it may well be that what I think is IBS is actually celiac related. I plan to ask my doc to have me tested when I see her again in May.

And yeah, it's a bitch eating gluten free. We do have an organic pizzeria on campus that does gluten free, so that helps a little. Eating out these days is just all about meat and salad.

The guy I once dated was celiac, as is a good friend. I could ask either of them about good alternatives for gluten substitution if you want. I know I've had some cookies/cake that have been gluten-free and the only way I would have known is because, well, they were eating it.
