Prep time - 10 mins. Cook time 30-45 mins. Serves 4
I had a penpal many years ago who lived in Montana - many celebrities live there as well and someone got the cool idea of getting together a cookbook with all their favorite recipes. This is from Jim Nabors and it’s my favorite chili recipe. He’s a little short on directions, but the recipe comes out great. After it cooks the requisite time, we spoon it into a 13 x 9 baking pan, cover it with cornbread batter and bake it off. A great one-dish Sunday dinner!
2 T. oil
1 lb gd. Beef
1 t. salt
2 -3 T. chili powder
1 - 8 oz. can of tomato sauce
1 - 20 oz can of red kidney beans (drained - you can also use a variety of beans, (pinto, black, etc)
1 medium size onion, chopped
2 T. vinegar (white vinegar works best)
½ t. garlic powder
1 - 28 oz. can tomatoes
Heat oil, then quickly brown meat, stirring with a fork. Add remaining ingredients. Mix well, cover and simmer, stirring occasionally for 30-45 minutes.
