The most comprehensive study about weapons and equipment in late Byzantine times and their depictions in art is the dissertation of Andrea Babuin (Babuin 2009), in which the most interesting pieces of art are also reproduced in over 1400 drawings.

Диссертация на греческом, поэтому просто взял оттуда пару картинок из иллюстративного материала.
Там эклектики почти на любой вкус. К примеру - седло с высокими луками, мундштучные удила, посадка с прямыми ногами, но на всаднике нет шпор, а есть лук с колчаном.
