I'm on such a weird schedule, I just ate lunch at 4 and now I have to start working on dinner. *facepalm* This is what happens when you get up several hours later than the rest of your household. Whoops!
For lunch I had:
2 slices whole wheat bread, toasted
1 ripe avocado, peeled and mashed
juice of half a lemon
pinch of salt
1 teaspoon sour cream
1 hard boiled egg, peeled and chopped
half a tomato, sliced
Mix the avocado, lemon juice, salt, and sour cream, then add the chopped egg and mix to combine. Pile the avocado mixture on the slices of bread and top with tomatoes. Nom nom.
415 calories, 37 g carbs, 27 g fat (mostly the good kind!), 13 g protein.
