Hey all, I thought I would post the chickpea recipe everyone liked so much at the pitch-in.

Chickpea Avocado Salad

1 ripe avocado
15 oz. can of chickpeas
1/4 cup banana peppers
1 yellow or orange bell pepper diced
1/2 of a red onion diced
2 Tbs. cider vinegar
pepper to taste
vegan bacon bits (handful)
Directions:
1) Drain and rinse the chickpeas in cold water.
2) Slice the avocado into medium sized chunks and dice the pepper and red onion.
3) In a medium bowl combine the chickpeas, avocado, bell pepper, onion, and banana peppers. I used mild banana peppers, but you can go crazy with the hot stuff if you'd like.
4)Add the cider vinegar, and pepper to taste and toss. Top with the imitation bacon bits.
