8 months and sourdough

Since today is the 19th, Theresa is officially 8 months pregnant today. Her pregnancy symptoms have tracked pretty well with what the 'What to Expect When You're Expecting' said. I think last time I posted she was in the second trimester and feeling pretty good. Now she's deep in the third trimester and she's feeling it. She gets tired really fast and it's hard for her to get around. Little things like putting on her shoes have gotten hard. Last week was her last week going to work in the office, she's going to be telecommuting from now on, at least as long as she can.

The baby has gotten increasing active, though I think he's stopped slipping under her rib cage. You can really see him moving now, sometimes you can see her whole stomach shift back and forth as the baby movies around. She's also getting really wicked heart burn and occasional contractions. Recently, the baby has moved down. He's starting to put a lot of pressure on her bladder and taken a little pressure off her stomach. That means her appetite has started to return.

We're pretty much all ready to go. We've packed a bag for the baby and one for Theresa. The nursery is ready. Not sure I can say the same for us, but we'll manage.

Baby stuff aside, I've started trying to bake sourdough bread. It's simpler than I thought to make sourdough starter, just put some flour and water together and let it ferment for a while. My first two loaves weren't that great. The third came out decently well, but there wasn't much sour taste. I bought some 'San Fransisco Style' starter online that I'm going to start soon. Also, apparently to increase the sour taste I need to proof it (let it set) at a higher temperature. For the loaf I'm working on now, I used a Styrofoam cooler with bottles of hot water for heat to make a proofing box so I'm optimistic it will come out with more sour flavor.

Now I'm thinking I want to build a more permanent 'proofing-box'. It would basically be a wooden box with a single incandescent bulb hooked up to the thermistat from a reptile incubator so I could dial different temperatures.
