Sweet and Spicy Chicken Wings

These are the wings I mentioned in my post about water. They were SO good, but SO messy! We'll definitely be making them again, though.

Sweet and Spicy Chicken Wings

wings (we used 15 wings, and it was plenty sauce)
1 cup flour

Marinade:
2-3 garlic cloves, minced
2 tbsp soy sauce
1 tbsp sesame oil
1 tsp chilli powder
1 1/2 tsp salt
1 tsp pepper

Glaze:
1/2 cup apricot jam (without fruit pieces)
1 garlic clove, minced
1 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp pomegranate molasses (we didn't have any, so I substituted a little honey and lime juice, but I'll probably make sure to have it for next time)
2 tbsp brown sugar
1/2-1 tsp chilli powder
1 tsp red chilli flakes

Mix marinade ingredients together, and pour over wings. Refrigerate for at least 2 hours. Then coat wings in flour, shaking off excess, and place on baking tray that has been lined with aluminum foil and sprayed with non-stick baking spray. Drizzle them with olive oil. Bake in 400F oven for 25 minutes, turn and cook another 25 minutes until cooked.

Meanwhile, mix all glaze ingredients in pot and bring to boil. Simmer for 5-6 minutes, stirring constantly. Remove and pour over wings. Serve hot with lots of paper towels and probably wet naps. Mmm.
