It's about time to start planning for my annual Easter party! I may have it April 11th instead of the 12th so as to not interfere with people's family plans and my work schedule. Here's what's on the menu so far:
Easter pie (of course)
Deviled eggs
Chicken salad puffs (cream puff shells, filled with my own sundried tomato basil chicken salad instead of with cream)
Strawberry spinach salad (was a huge hit last year! It is so delicious.)
Possibility: blanched veggies with hollandaise sauce
I think I need to play up the "potluck" aspect of my partay this year so maybe this is all I have to make. Easter pie ingredients can get quite expensive. Luckily Easter isn't during spring break this year so I will probably have a bigger turnout.
What are your favorite Easter/springtime recipes? Anything you think I'm missing?
