Easiest Lemon Bars EVER
1 box of 1 step angel food cake mix
1 16oz. can of lemon pie filling
Mix together by hand in a bowl, spread onto 10x15 jelly roll pan (these are my mom's directions...I have no freaking idea what a jelly roll pan is. I used a glass pyrex dish.) Bake at 350 (eta: Fahrenheit, not Celsius) for 15-20 minutes.
This, along with the cake mix cookies should make it so that I don't ever have to do the buy-at-the-grocery-store thing for potlucks anymore. ^_^;;
Plus! The lemon bars? Only dirties two dishes! And yes, I do count when I make things. A homemade, done by scratch cookie and/or lemon bar might taste delicious, but for me, the taste factor decreases for every piece of kitchenware I have to wash by hand after the fact. Also, also, I can't cook and/or bake, and going through that much effort for something that turns out mediocre is depressing. If these turned out like crap, oh well. It took five minutes to whip together and only two dishes to clean up after.
