for veggies, i had a similar dilemma.
I have some solutions for time saving:
- baby spinach in those plastic bins - prewashed and it doesn't need cutting. it goes straight from the container to the plate. I even put it on pizza. It goes in pasta sauce, rice, sandwiches....if you replace regular lettuce with it, it has a lot more vitamins and fiber.
- frozen veggies. I know they're a bit more $, but those fancy mixed and cut veggie bags are awesome. Wait until the sale...They have mixes that are great for stir fry or even just to nuke and throw in rice or pasta sauce something. If you don't like frozen, just buy it all fresh and chop the hell out of them on the weekend. They should last a week in the fridge.
- fruit with dinner. I cut up something and throw it on the plate with the main so we don't over eat.

I didn't have much success with the slow cooker...I tried soups and stews and chili, but to be honest, i found everything comes out tasting like bland crap unless you saute stuff first....which defeats the purpose of it. I think it would be good for making fresh pasta sauce or stock, though.

The Spinach is a good idea... I think I'll pick some up next grocery shopping.

I already add frozen veg to some stuff... just gotta add it to more I think.

Some of my other friends are slowcooker pros so I'll see what they do.
