I am participating in
Vegetarian Times 21 day lunch challenge. I usually already eat healthy for lunch, but this just further lends itself towards my goals for being more mindful of what I'm eating. In addition to eating a healthy lunch, this challenge wants you to get 30 minutes of exercise daily - even if it's just a 30 minute long walk. And also to set aside 10 minutes for meditation/centering yourself.
During these 21 days, I've also decided to be vegetarian. I've been eating entirely too much meat lately, and I need to detox my body from the meat. Again, this is due to my attempts at intuitive eating. I need to get back to a point where I can really tell when my body is actually craving meat.
The eating part is going well. That's the easy part for me. I've been about 75% thus far for exercise, and only 25% for meditation. I would really like to make it a habit to set aside 10 minutes in the middle of the day to center and ground myself. It really makes me much more at peace with the world.

Kale Cloeslaw - I used kale rather than collard greens, and I also added orzo to the slaw to make it more filling and passable as a meal.
