Cold Bean Salad
This is one of my favorite salads to take to a potluck where I know there will be gluten free, dairy free, meat free eaters. It is also one of my favorite easy meals.
Recipe from Romayne
2 cans black beans
2 cans kidney beans
2 cans garbonzo beans*
1 bunch spring onions chopped
Fritos Honey BBQ twists
Dressing**:
* 1 cup sugar
* 2 teaspoons salt
* 1 dash paprika
* 1/2 teaspoon chili powder
* 1/2 teaspoon celery seed
* 1/2 teaspoon dry mustard
* 1/2 cup grated onion to taste
* 1/2 cup red wine vinegar
* 2/3 cup ketchup
* 1 cup vegetable oil
Place all ingredients into blender and mix.
Layer beans, spring onions Fritos then sauce. Mix and serve.
*I often substitute whatever bean I have on hand with great results. You can also use dried beans, just cook as directed on the package.
** Kraft Catalina Dressing can be substituted for those who aren't concerned about gluten.
