I have always been a very HUGE fan of soup. I don't know what it is about soup, but it just always makes me very satisfied and happy. Making it, eating it, serving it, smelling it.... everything about soup just makes my day. Since I love soup so much I always play around with new recipes and always have a million ideas for soup bouncing around in my head. Well, I decided to make a soup that was Italian inspired, and this is what I came up with:
Guido's Italian Soup
1 pound italian sausage links (mild or hot, your choice... I used mild)
2 tablespoons olive oil
1 large onion, diced
4 carrots, diced
4 ribs celery, diced
2 teaspoons salt
3 cloves garlic, minced
2 teaspoons dried basil
1 teaspoon dried oregano
1 teaspoon red pepper flakes
2 teaspoons black pepper
2 quarts chicken broth
2 cans diced tomatoes with juice
4 large potatoes peeled and cut into 1/2 inch pieces
1/2 pound pasta (I like something small like orzo or ditalini)
1. Grill sausages and set aside to cool.
2. Sweat the vegetables and salt in the olive oil until tender.
3. Season the vegetables with garlic, basil, oregano, pepper flakes, and black pepper. Cook another 5 minutes.
4. Add the broth, tomatoes, and potatoes. Simmer on medium heat for 25-30 minutes.
5. Add the pasta. Simmer additional 10 minutes.
6. Serve with parmesan cheese and a good crusty italian bread.
