Since I had a hotpot gathering with friends on Saturday, I didn't know what to bring to as I'm sure the hosts would have brought enough food needed for hotpot. So, I ended up buying two 1 L bottles of chrysanthemum tea with extra added herbs made by a lady down the street from my place and tried out a cookie recipe I saw
here. I thought they were cute and weren't very hard to make. My friends loved them. They were essentially mini apple pies rolled in sugar and cinnamon. One of my friends said it would be even more awesome dipping them in a tub of vanilla ice cream.
I love my cookie cutters. I think they're cute. :)
Ingredients:
Filling:
1 small apple diced
2 tsp sugar
1/4 tsp lemon juice
ground cinnamon to taste
Dough:
80 g cold unsalted butter cut into pieces
150 g flour
pinch of salt
1 large egg yolk
iced water
1 egg white
Sprinkle:
mixture of sugar and cinnamon
Directions:
Filling:
1. Mix all ingredients into a bowl and microwave at 500 W for 3 minutes
2. Remove and stir. Let cool.
Dough:
1. Sift flour and salt.
2. Add butter and mix into a fine meal.
3. Add egg yolk and enough water to bring the dough together.
4. Put on a large plastic wrap and form a 1 cm thick disk. Cover and refrigerate for 30 minutes.
5. Preheat the oven to 180C.
6. Flour a surface and roll the dough to 3 mm thickness. Cut with a cookie cutter. I found that large cookie cutters are better.
7. Spoon some filling into the center one dough, brush the edges with egg white and top with the other dough. Close the edges.
8. Bake for 20 minutes or until lightly golden on the edges.
9. Allow it to cool.
10. Once cooled, mix sugar and cinnamon in a bowl and roll each cookie to cover.
