Friday night I meant to post this, but I had too much wine and fell asleep instead.
New recipe, dessert for dinner risotto:
1 cup arborio rice
3 cups water
1 cup vanilla soy milk
1 1/2 cups raisins
1/2 cup whole raw almonds
1/2 teaspoon cinnamon
1 tbs. butter
Heat water, milk, cinnamon and raisins in a small saucepan over medium heat until steaming, do not boil.
Heat butter on medium in a large skillet. Saute rice for 2 minutes until grains are clear around the edges. Add 1 cup of water/milk/raisins mixture, stir constantly. Slowly add all the milk/water/raisin mixture while stirring, until rice is soft. With the last cup of liquid, add the almonds.
This is basically a low sugar rice pudding, its just a little sweet and very yummy.
