I don't write fanfiction, but I just wanted to comment on this because it's a really interesting post. I am also not a big fan of either or these tropes you're talking about. I have liked very, very few AUs during my time in fandom (and I've been in fandom for over 10 years now). I don't mind minor AUs, like someone is going to play with the canon a bit to create an interesting scenario, but I tend to like my fanfiction to be written at least somewhat consistently with the universe in which it occurs. For me, it also depends on the series too, some are better for AU than others.
I think the reason why AUs are often written is for aesthetic purposes. An author wants a specific scenario and wants to imagine his or her favourite characters in it. Blah, I honestly don't have all that much time for it.
I am also not a huge fan of established relationship fics. If I really, really love a pairing, I will often love established relationship fics of it, but I often find myself really disappointed if I can't find a good get-together or first time fic for that pairing and all I can get is established relationship stuff.
I think, in general, I was spoiled by the Harry Potter fandom. That fandom has epic novel-length adventure/romance fics for a lot of popular pairings, and the fics are amazing. A lot of them are futurefics, of course, but I tend to like those quite a bit in certain fandoms. In the animanga fandoms I've been in, however, there just isn't that tradition of writing epic fics. Most of what you find is just one-shots of fluff or angst or pwp, which is fine, but I always miss the epic ones, and often find myself wanting them in my current fandoms.

Edit: Just because I don't think I explained myself particularly well, I just wanted to point out that when I talk about AU's, I generally tend to mean "take characters, put them in a different universe" stories. So, for example, making Shunsui and Ukitake into lawyers, etc... I love what if scenarios and futurefics, and attempt to fill in weird canon gaps XD
