To be honest I'm not entirely sure, but from writing AU roleplay I can definitely say it's seeing characters have slightly different relationships with other characters. Or for example, I write a private vampire AU which for the moment is following Shuuhei. Now in cannon Shuuhei was saved by Kensei as a kid, Shuuhei evidently looks up to him but so far that's been it. So far in cannon they've not met again or anything like that. Where as in the AU we've been able to give them that reunion and establish a relationship between the two (more a father son relationship despite how much I like my Kensei/Shuuhei)
But I guess what I'm trying to say is AU is a chance for you to bring the characters you like and something else you like reading about (whether it's vampires, an ancient civilasation or whatever) together. And as a writer I like the freedom it gives you with a storyline now that you have new elements/environment top draw from

But couldn't you simply write/rp future!fic, or something? Those are the king of AU I don't have a problem with. Writing about possible futures is awesome. However, adding someone being a vampire to that... : P

I suppose I'm just different. *grin* I love getting creative with the source material. If I wanted to write something, then I'd try my hardest to make it work in the canon setting. If it wouldn't work together, then I wouldn't want to use it either. XD Also, I don't quite understand the mixing of fandoms. I mean, I can see a certain appeal to it, but I like those fandoms for what they are, so changing them drastically sounds wrong to me.
(Which isn't to say you can't like it, of course. O_O And it did make sense, don't worry. :))

Perhaps I've not quite grown out of my pre-teen fic mindset but there you go. And if AU plot bunnies strike there's not much else i can do XDD
Crossovers... I like them if they're well written and the two fandoms can be related (and the authors not just grabbed their two or more favourite fandoms and shoved them together and had to make them work by something they've added in) Or it's gone into pure crack (I'm sure a Sailor Moon/Bleach crossover would be good for a laugh but not much else XDDD)
