Maybe I'll give peanut brittle a try for Christmas and try the pumpkin next year... Is it pretty much the same recipe to make it into peanut brittle?
And I will definitely be careful! At work on Friday I managed to burn myself (it blistered, ouch) so I will be trying *very* hard not to do that again!
Speaking of work, sorry for the delay in replies! I sort-of got roped in to working at another craft fair all this weekend... Thank goodness the madness ended earlier today!

Well, the weather wasn't the greatest, but we were inside and bad weather actually seems to help this time of year... If it's beautiful out, everyone stays home to do end-of-season yard work! Lucky for me, I didn't have to make anything this time! It's a fair that has exhibitors from all over the place, so I just had to help staff the event... I worked in the "Café" one day (which was when I burnt myself -- dratted heating trays) the "Sweet Shoppe" the next, and took raffle tickets, too.
No, it was one of those heating things that are used for catering and buffets and such... It had a metal tray, which sat inside the metal container over one of the little cans with some sort of heating fuel... Anyway, I hit the metal... :/

Me neither! And somehow I just got roped into a cookie exchange; like I needed something else to do before the holidays!
Well, I'm still a step away from that, as I still can't find the thing... Though last night I discovered some of our utensils have become hidden *behind* one of the drawers, so I will keep checking! Once I find it, what's the easiest way to calibrate it?

Heat some water to boiling (stove or microwave) and put the thermometer in the water. However many degrees over or under 212 it registers, add or subtract them from your candy temperature when you make it.
I'm glad it's healed so quickly.

The recipes are similar, but you shouldn't just substitute peanuts for the pumpkin seeds. This is the recipe I use for peanut brittle: http://www.marthastewart.com/page.jhtml?type=content&id=recipe1164.
It's very good. Remember to go by temperature; not time.

I've been busy busy with cookies and candy for Thanksgiving and Football banquets. Then the fit REALLY hits the shan. AHHHHHH!

I'm always glad of new recipes, but this year there seems to be a bumper crop of them. And if I don't make the old faves, people fuss. *sighs* :/

hee, Traditions can get a bit crazy like that... Does everybody get to come home for Christmas or do you have to ship cookies off to people?
They were pretty tasty (and I don't even like Pumpkin Pie!) and they're pretty simple too...
Pumpkin Pie Squares
Crust
1 c flour
1/2 c brown sugar
1/2 c butter
1/2 c rolled oats
Filling
15 oz (2 c) pumpkin
12 oz evaporated milk
2 eggs
3/4 c sugar
1 tsp cinnamon
1/2 tsp salt
1/2 tsp ginger
1/4 tsp cloves
Topping
1/2 c brown sugar
1/2 c chopped pecans
2 tbsp butter/margarine
-Preheat oven to 350.
-In bowl, combine all Crust ingredients. Mix until crumbly. Press into ungreased 9x13 pan. Bake 15 minutes.
-While crust is baking, combine all Filling ingredients. Beat well. Pour onto baked crust. Bake 20 minutes.
-While crust and filling are baking, combine all Topping ( ... )
