They were pretty tasty (and I don't even like Pumpkin Pie!) and they're pretty simple too...
Pumpkin Pie Squares
Crust 1 c flour 1/2 c brown sugar 1/2 c butter 1/2 c rolled oats
Filling 15 oz (2 c) pumpkin 12 oz evaporated milk 2 eggs 3/4 c sugar 1 tsp cinnamon 1/2 tsp salt 1/2 tsp ginger 1/4 tsp cloves
Topping 1/2 c brown sugar 1/2 c chopped pecans 2 tbsp butter/margarine
-Preheat oven to 350.
-In bowl, combine all Crust ingredients. Mix until crumbly. Press into ungreased 9x13 pan. Bake 15 minutes.
-While crust is baking, combine all Filling ingredients. Beat well. Pour onto baked crust. Bake 20 minutes.
-While crust and filling are baking, combine all Topping ingredients. Sprinkle over cooked pumpkin filling. Bake 15 to 20 minutes more, or until filling is set.
Yeah, it does seem to cause a great deal of irritation whenever I give in to temptation... But there are sometimes when I just can't resist a bit of reorganizing!

My brother Mike is coming for THanksgiving. Shannon is coming in for Christmas. But I ALWAYS make so many cookies we give them away and send them.
