Oh, it really is! And it seems like the drawers in the kitchen are particularly fond of eating things...

Ah-ha! That sounds very easy -- and makes complete sense! And I *finally* found the thermometer!!

hee, Traditions can get a bit crazy like that... Does everybody get to come home for Christmas or do you have to ship cookies off to people?

They were pretty tasty (and I don't even like Pumpkin Pie!) and they're pretty simple too...

Pumpkin Pie Squares

Crust
1 c flour
1/2 c brown sugar
1/2 c butter
1/2 c rolled oats

Filling
15 oz (2 c) pumpkin
12 oz evaporated milk
2 eggs
3/4 c sugar
1 tsp cinnamon
1/2 tsp salt
1/2 tsp ginger
1/4 tsp cloves

Topping
1/2 c brown sugar
1/2 c chopped pecans
2 tbsp butter/margarine

-Preheat oven to 350.

-In bowl, combine all Crust ingredients. Mix until crumbly. Press into ungreased 9x13 pan. Bake 15 minutes.

-While crust is baking, combine all Filling ingredients. Beat well. Pour onto baked crust. Bake 20 minutes.

-While crust and filling are baking, combine all Topping ingredients. Sprinkle over cooked pumpkin filling. Bake 15 to 20 minutes more, or until filling is set.

-Refrigerate after cooled. Enjoy!

My Mom 'helps' by periodically rearranging things so Dad and I have no idea where anything is.

YAY!!! Well, good luck with the peanut brittle!

My brother Mike is coming for THanksgiving. Shannon is coming in for Christmas. But I ALWAYS make so many cookies we give them away and send them.

OOH! That sounds so yummy!! I'm going to try it for the holiday.

lol. That's what I would do if I had my way, but I try to restrain myself... :-)

Thanks! I'll probably try it out in a couple weeks. In between holidays anyway, so I have a little more time to play with it.

That's good! It is fun making them, isn't it? Always a good part of the holidays!

Yeah, it does seem to cause a great deal of irritation whenever I give in to temptation... But there are sometimes when I just can't resist a bit of reorganizing!
