I'm not sure what came over me this weekend, but I ended up doing a ton of cooking... vegan cooking. Well, mostly vegan... the chocolate chips and the noodles probably weren't vegan. Anyway...
Friday night, I made seitan stroganoff using a recipe that came from the What the hell does a vegan eat anyway? blog (link can be found to the right of this entry). It turned out really well. It had minimal mushroom action. I served it on whole wheat noodles with steamed broccoli with some sweet stir fry sauce for dipping.
The next morning, I made apple/peach/cherry smoothies. We also had some multi-grain toast with some of my step-mother's pear/kiwi/peach/ginger preserves. I guess it was a fruit blend kind of morning.
Lunch was left over stroganoff.
Dinner was a stir fry with broccoli, yellow peppers from my "garden", fresh bean sprouts, scallions, chicken style seitan, noodles, and stir fry sauce. I meant to take a picture, but we were so hungry that the food was inhaled pretty quickly.
Dessert was a pudding made from barley, stewed apples, raisins, and nutmeg and cinnamon. It really hit the spot because my house was cold. I think I might have to turn the heat up soon.
Breakfast on Sunday consisted of pumpkin chocolate chip pancakes (a recipe from Martha Stewart that I veganized with Ener-G egg replacement and soy milk), Morningstar farms' bacon, and orange juice.
Lunch was homemade (by someone else, but purchased at Oasis) vegetable gyoza. They were tasty.
We ate dinner out, but came home to
Impossible Vegan Pumpkin Pie. It was incredibly easy to make, low fat, and was delicious!
I got almost everything that I needed at Eats and Oasis. Oasis has a ton of different seitans and tofus in their refrigerated section. The vegetables are great looking, too (especially at their peak on Fresh Friday and on Saturday). If my cooking spree continues, I'm sure I'll be shopping there more and more. :)
