lentil soup is delicious

Because I get asked about it almost every time I bring it in for lunch, here's my easy lentil soup recipe.

1 cup lentils
1 large potato or 2-3 smaller ones, diced
4.5 cups water
1 onion, diced
2 tsp or so of butter
1 large veggie bouillon cube
OPTIONAL BUT RECOMMENDED
1/2 tsp curry powder
1/4 tsp cardamom

Combine lentils and water in a large soup pot, bring to boil. When rolling boil achieved, add potatoes, cover, and simmer until potatoes/lentils mash easily. This takes ~30-45 minutes.

While the lentils are cooking, brown the onions in the butter in a small frying pan. When the lentils are getting close to being done, add in the onion.

When the lentils reach the desired texture, add in the bouillon cube, stir well to dissolve. Add in spices, stir well, remove from heat and serve. If the soup ended up to being too thick for your taste, stir in some milk.

It's honestly pretty idiot proof as long as you don't set it on fire and remember to stir every so often, and I'm sure there's a lot of variations that can be done with it.
