I thought it was over! But Here You Come Back again!

It has been nearly a month since you have last heard from me....I refuse to apologize for that :P

In that time period many things have happened:


-My mother’s boyfriend has died. They pulled the plug weeks ago and there are still issues surrounding funeral arrangements. He was unemployed at the time and didn’t have much of a savings so paying for the funeral is a huge issue. My mother was trying to get the arrangements in order and then his family came in and announced that since they never married, she didn’t have any right to be involved. This happened the day after they made the decision to take him off life support and in our home, which I found to be a huge insult to my mother. They were together 7 years and had always talked about getting married, but they just never did. His family is pretty useless and they really haven’t been in his life these past few years so their sudden attachment confused me. Nothing is really getting done and it’s painful for my mom, which really upsets me because she’s lost a good friend and a close cousin since August so she really doesn’t need this.

-Classes started about 3 weeks ago? Maybe? Anyway I have my first exam next week and I am trying to be a model student this semester. We had a guy flip out in our physics class and it was somewhat scary-the professor didn’t explain his question as he had left class and as soon as class was over he flew into out professor’s face and started this once sided screaming match. I was proud our professor didn’t back down but this guy really lost it and then had the nerve to tell campus police he wanted to be a doctor-doctor’s don’t fly off the handle and toss around claims of filing a law suit after disrespecting a professional with 300+ witnesses and tossing around racial slurs. Otherwise, things have been pretty tame-I am working in a lab this semester and I am learning to handle mice and not freak out in fear of being bitten.

-I have gotten my graduate schools submitted and completed with the exception of Louisiana State which I have been sitting on and twiddling my thumbs about. *sigh* I just need to tweak and finish this statement but this was the school I wanted to attend before I even really understood the way graduate school went. I’m pretty sure if I hadn’t been so fixated on my original life plan (NYU then LSU) I would have applied there in the first place. I also have to make cookies or buy treats as a “Thank You” gift to my recommenders.

-MY BIRTHDAY IS SATURDAY!!!!! I have been trying for awhile to come up with the perfect menu for the entire day and dinner is still an issue. I have decided I am making Alton Brown’s overnight cinnamon rolls for breakfast and shrimp and grits for lunch. Dinner might be Eggplant parmesan made from a recipe off of Jamie Oliver’s website OR lasagna…I might go out for dinner if I’m feeling really lazy….I was going to make a cheesecake for dessert as my birthday tradition usually involves a cheesecake instead of normal cake, but it’s been forever since I’ve had cake and an actually homemade affair even longer…I found a blueberry coffeecake recipe on ‘Chocolate & Zucchini’ and I hope it’s better than the Pioneer Woman affair I made for Thanksgiving which was a HUGE disappointment…

-On the topic of cooking I have done some things in the past month and a half. I made an apple pie, which I screwed up and didn’t turn out that great although the filling and crumb topping were delicious! I was cutting a dough recipe in half and accidently didn’t cut the water in half so I panicked and threw in flour to dry it out and it ruined my butter crust. The filling was great and I really have been thinking of baked apples for breakfast with that in mind *drools* I ruined a pudding by not cooking it long enough because a) I haven’t eaten pudding in ages and b) I was terrified I would ruin it. Nobody really ate that pudding. I made a cookies and cream cheesecake that didn’t overly impress me but was somehow devoured over a weekend *sheepish grin*. My friend had someone visiting and they invited me over for dinner so I made Smitten Kitchen’s brownie cookies, which I wasn’t really impressed by. I also don’t like chocolate and when I asked them they said they were good-although my friend kept going on and on about these cookies I made her for her birthday. I basically made tollhouse cookies and then poured an insane amount of cinnamon in the dough to the point they were a completely different color. I learned then that cinnamon really is spicy and too much of it will make you sweat *snickers* She loved them and even shared them with her family who sang my praises-it was a nice affair lol I have finally made Shepherd’s pie and it is delicious! I tried to make BBQ chicken burgers last week and they were nice but not the best thing ever-I ran out of BBQ sauce while making them :(

-I have finally watched ‘Shaun of The Dead’ and it was great! I brought something off of Amazon and got the $5 Video on Demand credit and since they didn’t have Leap Year offered (I HAVE BEEN OBSESSED WITH THAT MOVIE LATELY!) I watched that and it was great. I also watched ‘The Shining’ the other day and then couldn’t go to sleep out of fear of an axe man lol I watched some other movies over the weekend as well but they were mainly old 80s and 90s movies I’d seen before and I really just wanted to watch because I’d thought about them.

And now I am hopefully off to do homework!
