Ok, going to share my latest creation with you all... :-) This recipe was inspired by a recent HomeStyle Bakes recipe from Banquet.

What you need:

Boneless chicken breasts [sm, med, or lrg] ( for as many people in your family I used 5 large ones )
Mashed potatoes ( again, tailor to how your family eats, I used a 12 serving recipe )
Self rising flour ( aprox. 1 lb )
4 eggs
1/2 c. of milk
2 c. shredded cheddar cheese ( mild )
2 packets brown gravy mix

Preheat oven to 375* and spray your baking pan with cooking oil spray.

Mix together the flour, cheese, eggs, and milk together. This will make the biscuit top, you want it fairly thick, like it is when you make it from the real HomeStyle bake. Set aside and make the gravy according to the package, set this aside as well. Make the mashed potatoes according to the 6 servings, only double for the twelve. Again, make sure you use what your family will eat. If you wish to use less then that is fine. I make a lot cause my little family eats very hearty. Not to mention we are fairly active. In a baking dish, spread the the potatoes out but don't let it be thin. If it is, then it might burn to the bottom. Make sure you have an appropriate sized pan for the amount of food you are making. Place the chicken breasts on top of the mashed potatoes and spread the gravy on top. Set this aside. Now take the biscuit mix that you made and place large dollops on the top. Make sure you cover the top well. If you have to wet your fingers under some water and spread it, then do so. You want good coverage. Pop in the oven and cook for 45 minutes.

I made this tonight and it was a big success. I want to try this with some beef stew one night, again making a biscuit top. I've got to make sure to season the chicken cause it can taste birdy...so to speak. Or would the word be bland? Anyways, I love to cook so...There might be more of these to peek at. :-)
