This cake is gluten-free and nut-free.
I got it from Hubby's aunt whose son has celiac decease.
Ingredients for the cake:
70 g margarine or butter
125 g sugar
6 eggs
100 g chocolate shavings
200 g grinded almonds
1 teaspoon vanillin sugar (sugar mixed with vanillin, if you don't have, you could also add vanilla extract or something else that gives a bit vanilla flavor)
1 teaspoon baking powder
1 table spoon starch
Ingredients for the filling:
1 tin of mandarins
400 ml whipping cream
Mix all ingredients for the cake, grease a springform pan and fill in the mix.
Bake it for about 45 minutes at 150°C.
When the cake has cooled, hollow it out. This means that you remove some of the top of the cake so that you get something shaped like a flat bowl - the cake should still be thick enough to be a stable bottom, and the edge should be a bit higher than the middle. Crumble what you have removed.
Cover the cake with mandarin segments, leave about 1-2 cm free at the edge.
Whip the cream and put it on top of the mandarins.
Finally bury the whipped cream under the cake crumbles. In the end you should get a cake that looks a bit like a mole hill.
Put it in the fridge for about 2-3 hours.
