Way back in Year 8 (or was it year 10?) I made the most gorgeous apricot and white chocolate balls in home economics. I have never been able to find the recipe I used. So today I decided to blend together a number of recipes and invent my own.

I think I made two major mistakes. I soaked the apricots in water (and a splash of sherry, but you can't taste it so that was a bad idea too). Normally that's great for dried apricots, but it made the mix WAY too moist. Bummer. Secondly, I used the food processor to mix it all together, and in the process my finely chopped apricots became almost pureed apricots. Making the mix too sloppy, and too uniform so you don't get those lovely chunks of apricot in the balls. Double bummer.

So right now I have a blob of horrible looking stuff on a lined tray in the fridge. I'm hoping that when the white chocolate hardens there's enough in there to solidify it. I have my doubts. It might have worked if I had more coconut but I ran out. If I didn't add half a cup of sweetened condensed milk instead of extra white chocolate (which I'm saving to coat the balls in) it probably would have been better too.

Oh well. The mix is nice enough and I'm sure the kids will eat it. Nothing like what I remember though.

Anyone have a really good recipe?
