to paint or not to paint; and good room-separation curtains

I'm moving into my first "adult" (no roommates, no closet-sized studio) apartment soon! I'm really excited to do things like buy furniture, and I've collected so many prints, paintings, and drawings over the years and will finally have the space and the finances to do them justice in my home.

Question 1: So, what would you do with this place? To paint or not to paint? It's an old 19th century building with high ceilings and molding in the walls too.

I am hesitant to paint for a few reasons... the ceilings are pretty high, the walls are a combination of textures (fancy molding on the living room wall, funny panel things in the kitchen and bedroom), and the baseboards and lower part of some of the walls are already painted this nice pale bluish gray. my color palette of choice is usually obnoxious and doesn't quite mesh with understated blue. here's my current bedroom:


so what would you do? although I'm pretty partial to colors like chartreuse and lemon yellow, I was thinking something in the range of mustard/pumpkin might work? I'm not really into gray. Or I was thinking that in the living room I wouldn't even need to paint and could use those floor-to-ceiling windows as a good place for color (long red drapes maybe?).

Question 2: You may notice in the photos that there's no door to the bedroom (to the left of the kitchen), which I don't really mind so much since I'll be living by myself. There are currently some version of IKEA curtains there, but I was wondering if I should look for something heavier since the kitchen is right next to the entry? I do quite a bit of cooking, and although there's a ceiling fan and high ceilings, there isn't a fan over the stove. should I be concerned about cooking odors wafting into my bedroom? any recommendations for textiles in the entry?

edit:I just got off the phone with my landlady to confirm painting/key details and she said 1) I don't have to repaint when I leave provided that 2) I'm not painting the woodwork or painting with dark colors.
