I'm trying to think of inexpensive vegetarian breakfast foods that can be a) prepared in advance and requiring little to no work to make edible, b) relatively nutrient dense and c) appealing to finicky children who want "breakfast food" for breakfast. An additional preference but not requirement would be d) can be eaten out of hand. So far, I've come up with far too many starchy options.
Premade waffles or pancakes
Waffle or pancake batter to be made last minute each morning
Muffins
Hard boiled eggs
Sliced cheese, fruit and crackers
Granola bars
Grilled cheese might possibly be accepted
"Hot pockets" type pastries might be accepted but I haven't thought of what to fill them with
Yoghurt & preserves are always eaten but aren't easy to stay neat *or* eat while walking
More ideas would be appreciated!! TIA!
