Since my folks live 90 minutes away, it makes getting together during faire season nigh impossible. To make it up to them, I spend Father's Day weekend-which also happens to coincide with Mom's birthday-and treat them to a meal of their choice. Dad gets dinner, Mom gets brunch.
I spend a couple hours preparing menu choices, and they select. It's also a fun way to try some new recipes on willing victims conspirators. I do all the shopping, and lead the preparation, though I've been known to conscript sous chef help on occasion.
Here's what this year's Parent's Weekend celebration will include:
Dad's Dinner - "True Blue"
Pork Medallions with Blueberry Balsamic Ketchup
Mixed Greens with Feta, Almonds, and Blueberries
Wild Rice and Barley with Mushrooms
Blueberry-Strawberry Surprise
Mom's Brunch (couldn't come up with a clever name):
Griddled Corncakes with Cinnamon-Honey Yogurt
Yogurt Panna Cotta with Blueberry Compote
Brown Sugar Bacon Twists
Gotta say I'm a little shocked that she didn't select the Apple-Blueberry Breakfast Cobbler with Maple Cream or the Blueberry French Toast. Usually, her choices involve the highest percentage of blueberries possible! Though they still feature in the Panna Cotta, so that's all good.
Had to buy 4 pounds of blueberries from Costco last night. Good to know they will all be consumed with impunity.
This is double the family fun for me, as most of the recipes 1) are new to me; and 2) were provided by my birth mom. (She knows of Mom's penchant for blueberries and sends along newspaper clippings to aid the addiction.)
So... will share the results and recipes for those of you who are interested. With that, off to quest for gelatin sheets, get packed, and head north to Lake Texoma for a weekend of food and wilderness with the family.
