Well, the umpteemth annual BBQ went well with about 20 people....but I bought 24 ears of corn(@$0.25 each) and then cut them in half. Needless to say, I have CORN! Delicious corn!
So.....what to do with corn?
Cutoff cob...don't forget to scrape to get the "milk" aka protein and oil along with kernels of starch:
Add celery, carrots, potato, onion, and red pepper and broth to form a chowder! We blended about two cups of the veggies to thicken the chowder. Sprinkle fresh herbs like thyme, chives and basil for a garnish.
Corn Fritters!
Take 1/2 cup flour, 1/4 cup milk, 1/4 tsp salt, 1/2 tsp baking powder, 1 Tbsp sugar, 1 egg, a sprinkle of cayenne and chives. The batter looked thin so I added 2 Tbsp of masa. Deep fry until golden brown. For dipping, I used maple syrup; Sister K used honey.
Don't forget the squirrels!
