This recipe for
Cormeal Muffins is pretty delicious.
When paired with local cardamon icecream? AMAZING. But even without, pretty delicious and definitely a recommended recipe (although I did sub in olive oil for half of the sesame oil, because seriously who can afford to drop 2/3rds cup sesame oil on a single recipe).
And since it's been a month and change since I last posted, a summary of what I'm up to:
1) I'm having increased difficulty breathing and I'm working with a doctor to figure out why. Lots of appointments and lung tests and steroids have been introduced to my life in the process. Jury is out as to whether or not this is purely asthma. My inner jury is starting to suspect asthma with a side of something else, but time (and tests) will tell. At least I like my doctor? Unlike the guy who sewed my finger back together, he's not a jerk. Imagine!
2) Medical expenses are freaking me out. See paying for the above. Also see finger-surgery mentioned in my last post. Also see #4, which was already planned and budgeted before I started paying $200 a month to breathe. Yeeeek.
3) Work.
4) I'm going to Japan for a week in October. It's funny because this should be the primary thing on my mind (for it is AWESOME) but I'm so distracted by #1 that it hasn't really registered. I think I'm in for a shock when it's the last week of the month and I have to come to terms with, you know, traveling. It's my first time leaving the cat and my longest time away from work, too. Yikes! But exciting yikes. Very exciting yikes.
5) My garden. Crazy weather appears to finally be leveling off into our typical Indian Summer falls, so it looks like my zucchini crop may FINALLY be able to establish itself. Also, the cactus collection seems to have finally gotten settled. Man. Getting my hands in the dirt this year has been so exhausting with so little payoff, it would be nice if my green-things would finally settle down and flourish a little.
And that's all I can think of? I am awful at posting in LJ but I will endeavor to improve...
