Header Links & Entry Titles

I've been customizing cielo_gris' Vino - Violeta layout and have come across two issues that I can't seem to troubleshoot on my own. I've tried contacting the author a couple weeks ago, but so far I've yet to get a response. So I was hoping someone here could provide me with some insight.
1. Is there a way to customize the navigation header links? I'd like to rearrange the order, add a link to my tags, and change the links' text to something that's longer than the wizard will allow. I tried incorporating a couple different theme layer tutorials I've found here, but every time I try using a custom theme layer in conjunction with the custom css, it throws the layout completely out of sorts.
2. Is there a way to prevent an entry's subject from being incorporated into the journal title? I'm sorta using the blurb box as a header, and would like to have my journal title be static so that way it doesn't throw the header/blurb out of alignment with the background image.
