It has been grey and dripping all day long. I'd much rather be home curled up with a cat or two on my lap and a hot cup of tea. Or maybe taking a nap.
Plans for this evening after work: cook something hot. Maybe some white chicken chili (I have all the ingredients, yay!) or a nice pot of meatball soup.
My (ridiculously easy) recipe for meatball soup:
Canned chicken or beef broth (or a mix of the two)
Chopped onion
Canned chopped tomato
Assorted frozen vegetables (I like peas, green beans and/or canned mushrooms but there's no limit to where you can go with this)
Pasta (macaroni or spirals are my favorites)
Precooked frozen meatballs
Bay leaves
Seasoning to taste (garlic, cumin, ginger, salt & pepper, whatever else strikes your fancy)
Put broth & canned tomato in a pot over medium heat. Chop onion, add to pot. Add bay leaves, simmer for a while. Add veggies, pasta & meatballs. Simmer for a little longer, until pasta is almost cooked. Season to taste. Simmer some more. Serve with a hearty bread or pitas toasted with butter & parmesan.
